Dark Chocolate Gingerbread Truffles

Gingerbread Truffles

My Little Oilist and I wanted to make something chocolate for her daddy’s November birthday when I came across this recipe for gingerbread truffles. Knowing that Daddy Oilist enjoys variety, we decided to make this healthy dessert for his special celebration.

Following his birthday, those of us at home had to practice discipline because we wanted to eat these while he was away at work! I enjoyed the “holiday” taste of cinnamon, ginger, clove and nutmeg while still eating something good for me – something that was without processed sugar and a lot of carbs. As for Little Oilist, she enjoys anything chocolate and gave this a big thumb’s up!

 Gingerbread Truffles


6 ounces dark chocolate (at least 50 percent chocolate), finely chopped

1 tablespoon coconut oil

1 tablespoon honey or maple syrup (add more to taste if desired)

1/3 cup coconut milk

Pinch of sea salt

2 drops Cinnamon Bark essential oil

2 drops Ginger essential oil

1 drop Clove essential oil

1 drop Nutmeg essential oil

Unsweetened cocoa powder for rolling


·  Place the chopped chocolate in a heat-proof bowl and set aside. In this case, I made my own dark chocolate with cocoa powder, butter, vanilla and a little bit of stevia.

·  Combine the coconut oil, sweetener, coconut milk and salt in a small saucepan and bring to a simmer (do not boil).

·  Pour mixture over reserved chopped chocolate. Let stand for 1-2 minutes; then stir gently until completely melted and smooth.

·  Stir in the drops of essential oil.

·  Refrigerate until mixture is just set; about 2 hours.

·  With a small scoop or spoon, make 12 balls, rolling each between the palms of your hands to smooth.

·  Place about ¼ cup of cocoa powder in the bottom of a shallow plate or dish. Roll each truffle in the cocoa until coated.

·  Refrigerate for at least 15 minutes to firm.

·  Let stand at room temperature 10 minutes before serving. Enjoy!

Truffles can be refrigerated in a sealed jar or airtight container for up to two weeks.

It was a quiet, peaceful room. The curtains were drawn and all was quiet except the soft background music. My massage therapist friend was moving around my growing pregnant body massaging tight places.

Then without any warning, I started hiccuping. These were not just little hiccups, but were big, deep-in-your-belly-type hiccups. They continued truly messing with the serene atmosphere of the experience.

Not fazed, my friend said she had something to help me. I was expecting one of the home remedies that had never worked for me – a spoon of peanut butter, a taste of white sugar or doing something with my ears.

She returned with a bottle of essential oil. I was intrigued as she began massaging a drop of Endoflex into my lower tummy. I waited for the next hiccup, but it never came. “That is a neat coincidence,” I thought.

Nonetheless, I ordered a bottle of Endoflex with my next order. I have had several occasions to apply it to my hiccuping Oilist family members, and it has worked every time!

Just this week as I was cuddling my Little Oilist to sleep, the big deep-in-your-belly hiccups started and began annoying her. “I need an oil!” she wailed. Within minutes after applying Endoflex, she was snuggled again in my arms with NO hiccups. A coincidence? After many times of seeing this work, I think not!

Endoflex has a base of sesame seed oil and contains 6 essential oils – spearmint, sage, geranium, myrtle, nutmeg and German chamomile. I loved researching each of these 6 constituents. Here is a little that I learned about each:

Spearmint – “Is treasured for its unique minty flavor, as well as its ability to help calm tummies and support normal digestion as a dietary supplement. With naturally occurring menthol, carvone, and limonene, Spearmint Vitality essential oil can add a cooling effect to foods that is both pleasant and beneficial.”

Sage – “Has a spicy, herbaceous aroma. It has been recognized for its ability to strengthen the senses and vital centers of the body and to support metabolism. It is helpful for supporting the respiratory, reproductive, nervous, and other body systems.”

Geranium – “Has an uplifting, floral aroma and includes the naturally occurring constituents citronellol and geraniol.”

Myrtle – “Has a clear, fresh, herbaceous scent, similar to eucalyptus. Supportive of the respiratory system, skin, and hair, it has been researched for its effects on glandular imbalances and its soothing effects when inhaled.”

Nutmeg – “Has a sweet, warm, spicy scent similar to the spice commonly used in cooking. Comforting and soothing, nutmeg helps boost energy. It also supports nervous and endocrine systems and prostaglandin balance.”

German Chamomile – “Has been used to support the body’s natural response to irritation and injury. This oil contains chamazulene, a compound studied for its ability to help the body’s natural inflammatory response.”

Chocolate Thin Mints

I remember the amazing taste of the Girl Scout thin mint cookies that my grandfather would buy. They tasted so fresh, so sweet and a wonderful mix of soft and crisp. They were some of my favorite cookies.

Fast forward a couple decades and I still love the fresh taste of mint and the amazing taste of chocolate and mint together. So I was super stoked to find a natural, good-for-you version of my childhood favorite.

As my dough was cooling in the refrigerator, Daddy Oilist, who didn’t know that I had made the cookie dough and had tasted it, came into the kitchen and gave me a kiss. He stepped back surprised and asked, “Did you get a new peppermint toothpaste?” 🙂

Peppermint essential oil is very potent, so a few drops is all you need for a distinct and refreshing peppermint flavor.

Here is a wonderful recipe to satisfy your chocolate craving and freshen your breath!


1 cup + 1 tablespoon blanched almond flour

1 tablespoon tapioca

1/3 cup cocoa powder

¼ cup + 1 tablespoon grass-fed butter

1 teaspoon vanilla extract

1-2 drops Peppermint Vitality essential oil

dash of Himalayan sea salt

2 tablespoons pure maple syrup or raw honey (or equivalent amount of desired sweetener)

½ cup dark chocolate

1-2 drops Peppermint Vitality essential oil


  • Preheat oven to 350 degrees.Thin Mints

  • In a bowl combine dry ingredients followed by wet ingredients; roll dough into a ball, wrap in parchment paper and chill for 30-45 minutes.

  • Remove dough from fridge and roll into 1/2 inch balls.

  • Place on seasoned baking stone (or cookie tray) and flatten

  • Bake for 15 minutes or until crisp.

  • Remove and let cook completely. Cookies will be crunchy.

  • Melt chocolate and add in Peppermint Vitality essential oil.

  • Dip cookies in chocolate  or spread on the chocolate and let set in the refrigerator.

This is the one product that we have used the least as I am firm believer in good, old-fashion hand washing. However, I find it nice to pass this around the car for a quick cleaning after we are done shopping. I also like to use this in addition to hand washing when we are around sickness.

Re-hydrating Drink

As a natural mom, I am always SO excited to learn healthy tips or tricks that really work. I love filling my health “toolbox” with all-natural and truly effective tools.

Here is a new one that I recently stumbled upon. We all have times when our bodies are dehydrated. Maybe we’ve worked too long in the sun, or the flu has left our bodies parched and needing electrolytes, vitamins and liquids.

We recently found ourselves in this unpleasant situation. Our chiropractor suggested that we start drinking coconut water, as it is full of vitamins and is an excellent hydration drink.

There was only one problem. The person needing to be re-hydrated was our Little Oilist toddler, and this little girl doesn’t like coconut water. But she needed help, and she needed it fast. We were willing to try anything, but I wanted it to be a fun experience…

So I dug out and dusted off Google and began researching. I quickly started noticing a link between what I was learning about antioxidants and essential oils for this re-hydration issue and Young Living’s NingXia Red.

I knew from experience that we all love the taste of NingXia Red, so I wondered what would happen if I mixed a tablespoon or two into a serving of coconut water.

I was pleasantly surprised and delighted that it worked! My Little Oilist loved it and would ask for more through the day.

By the next chiropractic visit later that week, we had a good report to give and a new recipe to share.
